Meal kit: a box to a cleaner environment ?

| dc.description.abstract | These days, there is still a concern about the amount of food that is discarded in households. The literature around food waste, however, mainly focuses on the impact on the environment, social and monetary issues of food waste rather than the consumer behavior. One possible way to reduce the food waste is the introduction of meal kits. The purpose of this research is providing more insight in avoidable food waste in relationship with meal kits. Furthermore, this study extends existing literature by investigating a moderating role for type of provider, environmental knowledge, price consciousness, and quality aspects in the relationship between meal kits and food waste. This study made use of a food waste diary among 40 respondents, where people had to keep track of how much food was discarded during dinner for seven days. The data was analysed using the linear regression technique. The results showed a significant negative effect for meal kits and a marginally significant effect for type of provider in relation to perceived food waste. However, there were no significant effects found for the other moderators. This research concludes with providing theoretical and managerial implications and suggestions for future research are provided. | en_US |
